clean eats

I was in a bakey mood last weekend so I made up this muffin recipe.
I ended up really liking them, especially topped with some melty honey butter. Delish. And how.

         1 whole medium sized apple. Cored & chopped into small pieces (I used fuji).
         2 tsp cinnamon
         1 tsp nutmeg
         1 tsp vanilla 
         3 TB honey
         2 cups whole wheat flour
         1 tsp baking soda
         1/2 tsp salt
         1 cup applesauce
         1/2 cup water

         In a small bowl, mix together the chopped apple, cinnamon, nutmeg, vanilla, and honey. Set aside. In a bigger bowl sift together the flour, baking soda and salt. Slowly stir in the applesauce, contents of the small bowl, and the water to the dry mixture in the big bowl.
         Bake in a greased muffin pan at 350 for 20-25 minutes. Makes 12-15.

We topped our muffins with a half stick of room temperature butter whipped together with some honey and cinnamon.
Highly recommended.

Also: To beef up the nutritional value, I added about a tablespoon of ground flax seed.
Optional but a simple way to get some extra omega-3 essential fatty acids and fiber ...
